Fantastic prescription of last prince Alberto

Within our dessert section, we add traditional prince Alberto whose origin is of the Canary Islands (concretely of the island of the Palm).

For his preparation we will use ingredients traditional and easy to obtain, as the chocolate, fruits droughts as almonds and hazelnuts, cream and sponge cake.

The origin of the peculiar name is not known for sure (prince Alberto prostrate oneself). Some sources say that prince Alberto in one of his visits or daily phrase proved it that can be shelp: €œthis sponge cake is better that prince Alberto€.

  • 4 Eggs
  • 200 g black Chocolate
  • 8 spoonfuls of Sugar
  • 200 ml of cream to mount
  • 100 g Butter
  • 150 g Hazelnuts
  • 150 g Almonds
  • 2 Packages of sponge cakes of soletilla
  • Coffee

How to prepare last prince Alberto

Step 1: chocolate

The first step for our last prince Alberto is to integrate butter and the chocolate in a same ingredient. In a dipper, we introduce butter and the chocolate and we let them melt until they are integrated perfectly.

Step 2: Preparation of the almonds and the hazelnuts

We need bare almonds and hazelnuts, reason why if we have them with skin, the simplest form is using hot water.

In a frying pan without oil, we toasted the almonds and the hazelnuts frequently, moving them to avoid that they are burned.

When they are already ready, we let them cool some minutes and we crushed them in a beater. What we looked for is not that they remain pulverized, but to small pieces, reason why also we can do it of homemade form with a mortar.

Step 3: to mount the chocolate cream

In a bowl, we with these last ones separated the yolks of the clear ones, having left. We add the sugar to him and we mounted them until snow point.

In another bowl, we do the same with the yolks, until they take more volume.

It incorporates the cream and the chocolate and we shook slowly until mixing well all the ingredients and forming a more or less thick cream.

Now, we united the yolks with the clear ones, slowly, until uniting both ingredients. From here, you unite the rest of ingredients well, removing them until forming grazes united

It adds to the sliced almonds and hazelnuts, but it lets a few to decorate the cover.

Step 4: mounting the ingredients of last prince Alberto

We create one first layer with the sponge cakes as it bases. These sponge cakes we will previously bathe them in the coffee, so that they will increase its volume.

Next, we covered them with the cream with chocolate. We create a new layer of sponge cakes bathed in chocolate and finished the last layer with the chocolate cream.

Finally, in the part superior, we took advantage of the remaining almonds and hazelnuts to decorate the surface.

In order to bind the ingredients still more and to give a greater flavor, we let him cool in refrigerator a few hours.
